Cheesemaker and fourth-generation farmer Simon Jones’ family began their farm in the beautiful Lincolnshire Wolds, 7 miles from the east coast, over a hundred years ago in 1917. Now home to Lincolnshire Poacher Cheese, they provide award-winning artisan cheeses, raw milk, butter, and more.
All the cheese is produced using traditional techniques, learned and passed down from Dougal Campbell, who learned it himself in the French mountains. They believe that ‘all the little things add up to make a great cheese’. That includes growing clover-rich pastures, with no fertiliser, for their herd of 230 pedigree Holstein Friesian cows to graze on. And they believe that this sweeter grass, and their own fresh unpasteurised milk make for a more complex cheese.
From field to fork, every element of the cheese-making process has been carefully laid out to be as sustainable as possible. And they even have multiple renewable projects ongoing, such as wind turbines, and solar panels, together creating more electricity than they consume.
They sell their cheese all over Lincolnshire and beyond, through farmer's markets and their online store. For cheese-loving individuals, customers can gift one of their beautiful hampers of cheese with other Lincolnshire goodies. And they’ve even got a great selection of wedding cakes made from stacked cheese.
